  • 2 cups cooked rice (white or brown—substitute quinoa for a nutty flavor)
  • 1 pound sausage (Italian or turkey for a healthier alternative)
  • 2 cups chopped broccoli (fresh or frozen)
  • 1 cup shredded cheddar cheese (try Monterey Jack for a milder taste)
  • 1 can cream of mushroom soup (consider homemade or a low-sodium version)
  • 1/2 cup milk (almond milk works well for a dairy-free option)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped onions (optional for added flavor) Optional ingredient for added flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the sausage until it’s browned and cooked through, about 7–10 minutes.
  • In a large bowl, combine the cooked rice, sautéed sausage, broccoli, cheddar cheese, cream of mushroom soup, milk, garlic powder, salt, and pepper. Mix until everything is well combined.
  • Pour the mixture into a greased 9×13 inch baking dish, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for about 30 minutes, or until bubbly and the top is lightly browned.
  • Once out of the oven, let it cool for 5 minutes before serving.

Notes

Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, pop it in the oven at 350°F for 20 minutes, covering it with foil to prevent dryness.
