  • 1.5 lbs sirloin tips Cut into bite-sized cubes
  • 3 tablespoons flour For coating the beef
  • 3 tablespoons olive oil For browning the beef
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 cup dry red wine Optional
  • 2 tablespoons butter
  • 1 small yellow onion Diced
  • 3 cloves garlic Minced
  • 2 cups beef broth
  • 1 cube beef bouillon
  • 1.5 teaspoons Worcestershire sauce
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 3 tablespoons cornstarch
  • 1/4 cup cold water

Instructions
 

Preparation

  • Cut the sirloin into 1-inch cubes, trimming away any large pieces of fat.
  • In a bowl, combine flour and beef seasoning mix. Sprinkle this mixture over the beef cubes, tossing to coat evenly.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. In batches, add the beef to the skillet and brown on each side for about 30-45 seconds. Once browned, transfer the meat to a plate and set aside.
  • Deglaze the skillet by adding dry red wine (if using), scraping the bottom to release any flavorful bits. Let the wine reduce by half.
  • Mix in the butter and diced onions, cooking until the onions soften. Add the minced garlic and cook for an additional minute.
  • Combine beef broth, bouillon cube, Worcestershire sauce, thyme, rosemary, and additional spices in the skillet. Bring this mixture to a boil.
  • In a small bowl, mix cornstarch and cold water to create a slurry. Whisk this into the gravy until you reach your desired thickness.
  • Add the browned beef back into the skillet. Reduce heat to medium-low and let cook for 10-15 minutes, allowing the flavors to meld.
  • Optionally, swirl in cold butter before serving for a richer taste.

Notes

Beef Tips and Gravy can be served with creamy mashed potatoes, egg noodles, or rice. Leftovers can be stored in airtight containers in the refrigerator for up to 3-4 days, or frozen for up to three months. Reheat on the stove or microwave, adding broth if needed to loosen the gravy.
