(recipe below)

A flavorful pasta dish packed with smoky sausage, mozzarella cheese, and veggies, perfect for a comforting weeknight meal.

Ingredients 🛒
12 oz pasta (fusilli, penne, or rotini)
1 lb smoked sausage, sliced (such as kielbasa or andouille)
1 cup mozzarella cheese, shredded
1 bell pepper, chopped (any color)
1 small onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 cup chicken broth
1 tsp Italian seasoning
½ tsp red pepper flakes (optional, for heat)
2 tbsp olive oil
Salt and pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Instructions 👩‍🍳
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

Sauté the Sausage and Veggies:
In a large skillet, heat the olive oil over medium heat. Add the smoked sausage slices and cook for 3-4 minutes until they begin to brown. Add the chopped bell pepper, onion, and garlic, and sauté for an additional 3-4 minutes, or until the veggies are softened.

Make the Sauce:
Stir in the diced tomatoes (with their juices), chicken broth, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for about 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Combine the Pasta and Cheese:
Add the cooked pasta to the skillet and toss to coat it in the sauce. Stir in the shredded mozzarella cheese, allowing it to melt and make the dish creamy and cheesy.

Serve:
Remove the skillet from heat and garnish with freshly chopped basil or parsley. Serve hot and enjoy your cheesy, smoky pasta creation!
