Ingredients
4 medium sweet potatoes
1 ½ cups cooked roasted turkey, shredded
½ cup cranberry relish
¼ cup chopped walnuts (optional)
¼ cup cream cheese, softened
2 tbsp unsalted butter
1 tsp ground ginger
½ tsp ground allspice
Salt and pepper to taste
Fresh thyme, for garnish

Directions
Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork, place them on a baking sheet, and roast for 45-50 minutes, or until tender. Allow them to cool slightly.
Make the Filling: In a large mixing bowl, combine the shredded roasted turkey, cranberry relish, cream cheese, butter, ginger, allspice, salt, and pepper. Mix until well combined.
Stuff the Sweet Potatoes: Slice the sweet potatoes in half lengthwise and scoop out some of the flesh. Add the sweet potato flesh to the turkey mixture and mix. Spoon the filling back into the sweet potato skins.
Bake Again: Place the stuffed sweet potatoes back in the oven and bake for 10-12 minutes until heated through.
Serve: Garnish with chopped walnuts (if using) and fresh thyme. Serve hot!
