Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs, finely ground
1/4 cup granulated sugar, sifted
6 tbsp melted butter, cooled
For the Cheesecake:
16 oz cream cheese, softened to room temperature
3/4 cup granulated sugar, confectioner’s style
1 tsp pure vanilla extract, high-quality
Zest of 2 limes, freshly grated
Juice of 3 limes, freshly squeezed (about 1/3 cup)
1 cup heavy whipping cream, chilled
For the Lime Mousse Topping:
1 cup heavy whipping cream, chilled
1/4 cup powdered sugar, sifted
Zest of 1 lime, freshly grated
1 tbsp freshly squeezed lime juice
Instructions:
Prepare the Crust:
Preheat the oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, sugar, and melted butter, mixing until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden brown. Let it cool completely.
Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add vanilla extract, lime zest, and lime juice, and continue mixing until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the lime cheesecake mixture until combined.
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or overnight until set.
Prepare the Lime Mousse Topping:
In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form. Add the lime zest and juice, then continue whipping until stiff peaks form.
Gently spread or pipe the lime mousse over the top of the cheesecake for a light and airy finish.
