Pumpkin Cinnamon Roll Muffins 🎃🥐
Here’s a recipe for a delicious fall treat:
Ingredients:
1 cup of pumpkin puree
1/3 cup of white sugar
1/3 cup of dark brown sugar, tightly packed
1/2 cup of vegetable oil
2 large eggs
1 teaspoon of vanilla essence
2 cups of all-purpose flour
1 tablespoon of baking soda
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1/4 teaspoon of salt
Instructions:
Preheat the oven to 175°C (350°F). Prepare a muffin tin by greasing it or lining it with paper cups.
In a large bowl, whisk together the pumpkin puree, white sugar, dark brown sugar, oil, eggs, and vanilla essence until the mixture is smooth and well combined.
In another bowl, mix together the flour, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool slightly before serving.
