Indulgent Peanut Butter Cup Cookie Bars with Rich Chocolate Layers
Ingredients:
Half a cup of butter, softened to perfection
Half a cup of dark brown sugar
Quarter cup of white sugar
One large egg, beaten to a pulp
One teaspoon of vanilla essence
One cup of all-purpose flour, sifted to remove lumps
Half a teaspoon of baking soda
Quarter teaspoon of salt
One cup of rolled oats, toasted for added crunch
One cup of semi-sweet chocolate chips, melted for a smooth consistency
Half a cup of creamy peanut butter, spreadable for ease
One cup of mini peanut butter cups, chopped into bite-sized pieces
Directions:
Precise your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for a non-stick surface.
In a large mixing bowl, cream together the butter, brown sugar, and white sugar until a light and fluffy consistency is achieved.
Beat in the egg and vanilla essence until well combined and smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
Stir in the oats and chocolate chips, then press half of the dough into the prepared baking dish.
Melt the peanut butter in the microwave for about 30 seconds and spread it evenly over the dough layer. Allow it to cool and set slightly.
Sprinkle the chopped mini peanut butter cups over the peanut butter layer, then crumble the remaining dough on top.
Bake for 25-30 minutes, or until the top is golden brown and the edges are slightly caramelized. Let cool completely before slicing into bars.
