Chicken Pot Pie

  • Pastry brush

INGREDIENTS  

  • 2 skinless, boneless and skinless chicken breasts cut and cooked
  • 1 tablespoon olive oil 1 tablespoon olive
  • 1 onion chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks cut into dice
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 Cup frozen peas
  • 1 cup of heavy cream
  • Salt and pepper as desired
  • 1 package of pie crusts from a store (2 crusts)
  • 1 egg, beat (for wash with egg)

INSTRUCTIONS 

  • PreheatPreheat your oven to 350degF (190degC).
  • In a large pan cook the olive oil on a moderate temperature. Add the chopped onion, carrots and celery. Cook until softened, around 5 minutes.
  • In the same skillet, add the garlic mince and cook for a further minute or until fragrant.
  • Sprinkle the flour on all the veggies in the pan, and stir until it is combined, creating the”roux.
  • Gradually introduce the chicken broth and stir frequently to prevent lumps from forming.
  • Bring the soup to a boil and cook until it becomes thicker, about 5 minutes.
  • Mix in the diced cooked chicken and frozen peas along with heavy cream. Add salt and pepper as desired.
  • Make a pie crust and then place it in the pie dish. Press it down to the edges.
  • Put the chicken mixture in the crust of the pie.
  • The second pie crust should be placed on top of the filling. Cut off any excess crust and crimp it to seal.
  • Make sure to brush the top of the crust with an egg beater for an elegant golden look.
  • Cut slits into the top crust, allowing the steam from baking to exit during cooking.
  • Cook your Chicken Pot Pie in the preheated oven for 35 to 40 minutes, till the crust has a golden brown color as well as the pie filling has a bubbly appearance.
  • Let the pie cool for a few minutes before cutting and serving.
