Ingredients:

For the Freshly Baked Potatoes:

4 large Idaho potatoes, peeled and chopped
1/2 cup whole cream
4 tbsp unsalted butter
Salt and pepper to taste

1 lb ground beef
1 small shallot, diced
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups beef stock
1 tbsp tomato paste
1 tsp dried oregano
Salt and pepper to taste
2 tbsp unsalted butter
Instructions:

Prepare the Freshly Baked Potatoes:

Place the chopped potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
Drain the potatoes and return them to the pot. Mash until smooth.
Stir in the butter and cream. Season with salt and pepper. Set aside and keep warm.
Cook the Ground Beef:

In a large skillet, melt the butter over medium heat. Add the diced shallot and garlic, cooking until soft and fragrant, about 2-3 minutes.
Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat if necessary.
Make the Meat Sauce:

Sprinkle the flour over the browned beef and stir until fully absorbed. Cook for 1-2 minutes to remove the raw flour taste.

Add tomato paste, oregano, and season with salt and pepper. Simmer for 5-7 minutes, or until the sauce thickens.
Assemble:
