Ingredients
For the Chili:

3 pounds lean ground beef
2 medium onions, finely chopped (½-inch)
4 cloves garlic, minced
12 ounces light beer (about 1 can or bottle)
28 ounces canned whole tomatoes (with juice)
14 ounces canned diced tomatoes (with juice)
1 medium green bell pepper, diced (optional)
14 ounces tomato sauce
15 ounces canned red kidney beans, drained and rinsed
For the Spice Blend:

4 tbsp chili powder
1 tbsp ground cumin
2 tsp dried parsley
1 tsp smoked paprika
1 tsp salt
1 tsp black pepper
1 tsp dried oregano
Instructions
In a bowl, combine half of the spice blend with ground beef and mix until well combined.
In a skillet, brown the ground beef, onions, and garlic until no pink remains. Drain any excess fat. Add beer and simmer until most of the liquid has evaporated.
In the slow cooker, combine the beef mixture and all remaining ingredients, including the rest of the spice blend. If desired, slightly mash the whole tomatoes.
Cook on high for 4 hours or low for 7-8 hours. Once cooked, remove the lid and let cool slightly before serving.
