Delightful Pasta Salad Recipe

INGREDIENTS  

  • 8 eight ounces (about 220 grams) of pasta (such as fusilli, rotini, or Penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • Half bell pepper (any color) diced
  • A quarter of a red onion, thinly diced
  • 1/4 cup black olives, sliced
  • 1/4 cup of crumbled cheese feta (optional)
  • Fresh parsley chopped to 2 Tablespoons.
  • Salt and pepper according to your preference

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Half a teaspoon of dry oregano
  • Salt and pepper according to your preference

INSTRUCTIONS 

  • 1. Prepare the pasta according the instructions on the packet until it is al at al. Then drain the pasta using a colander, then rinse it in cold water, allowing it to end cooking. Let it completely cool.
  • 2. Within a large mixing bowl, combine the cooked and chilled pasta with cherry tomatoes, cucumbers, bell pepper bla,ck olives, red onion, broken feta cheese (if you are using it)) as well as chopped parsley.
  • 3. In a small jar or bowl mix together the olive oil and red wine vinegar in a small jar or bowl. Add Dijon mustard, crushed garlic, dry oregano, salt, and pepper for the dressing.
  • 4. Serve sauce over pasta salad, and mix until all components are coated evenly.
  • 5. Test the pasta salad, then adjust the spice using more salt and pepper, if necessary.
  • 6. Serve the Classic Pasta Salad on a platter or serving bowl and decorate with chopped parsley, if desired.
  • 7. Serve your pasta salad as soon as you can or cool it down for at least one hour so that the flavors to blend prior to serving.
