Cowboy Casserole

Indulge in this comforting Cheesy cowboy Casserole, a delightful combination of savory ground beef, creamy sauce, and crispy tater tots, all topped with melted cheese and bacon!

📝 Ingredients:

1 pound ground beef
1 can (10.75 oz) cream of mushroom soup
1/2 cup milk
1/3 cup sour cream
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups frozen corn
1 1/2 cups shredded cheddar cheese, divided
1/2 cup bacon, cooked and chopped
28 oz frozen tater tots
🧑‍🍳 Instructions:

Preheat Oven: Preheat the oven to 375°F (190°C) and spray a 9×13-inch pan with cooking spray.
Cook Ground Beef: In a skillet, cook the ground beef until no longer pink, breaking it into small pieces. Drain the grease.
Make the Sauce: In a large bowl, whisk together the cream of mushroom soup, milk, and sour cream until smooth.
Season the Mixture: Add onion powder, salt, and black pepper, then mix until combined.
Combine Ingredients: Stir in the cooked ground beef, corn, 1 1/2 cups of cheddar cheese, and chopped bacon with a wooden spoon until well mixed.
Assemble Casserole: Pour the mixture into the prepared pan and layer the remaining 1 1/2 cups of cheese and tater tots on top.

Add More Cheese: Top with the remaining 1 1/2 cups of cheese and bake for about 5 more minutes, until the cheese is melted.
