Chicken Pot Pie

INGREDIENTS  

  • 2 boneless skinless chicken breasts cut and cooked
  • 1 cup of chopped frozen vegetables (peas, corn, carrots)
  • 1 cup of chopped onions
  • 1/2 cup diced celery
  • – 2 cloves garlic, minced
  • 3 tablespoons butter that is unsalted
  • – 1/4 cup all-purpose flour
  • – 1 1/2 cups chicken broth
  • – 1/2 cup milk
  • 1 teaspoon of dried thyme
  • Salt and pepper as desired

INSTRUCTIONS 

  • Pre-heat your oven to 375degF (190degC).
  • In a medium-sized pan melt the butter on moderate temperature. Add the chopped onion, celery along with minced garlic. Then cook until the vegetables become soft, around 5 minutes.
  • Mix in the flour and cook for about a minute until the mixture turns golden brown.
  • Slowly whisk into the milk and chicken broth and milk, making sure to stir constantly to prevent the formation of lumps.
  • Add the chopped chicken as well as frozen mixed vegetables dried thyme leaves, salt and black pepper into the pan. Bring the sauce to a boil and cook for 5-7 mins until the sauce is slightly thicker.
  • Make some pie crusts onto a surface that is floured so that it fits in the baking dish’s bottom. Put it in the dish’s bottom.
  • Pour the filling of chicken and vegetables over the crust on the bottom.
  • Make the second pie crust and then place it on topping of filling. Remove any crust that isn’t needed and then crimp it to close the edges.
  • Cut a few small slits into the top crust, allowing the steam from baking to exit during baking.
  • Make sure to brush the top of the crust with a lightly beat egg or milk to create the golden appearance.
  • Bake in the oven that is preheated for 30 to 35 minutes, or till the pie crust has a golden brown color and the filling has started to bubble.
  • Let it to sit for several minutes prior to serving.
