EQUIPMENT

INGREDIENTS  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon of ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup of sugar granulated
  • One cup of vegetable oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 Cup grated carrots
  • 1 cup of chopped pecans, walnuts, or chopped nuts (optional)
  • Crème cheese frosting (store-bought or made at home)

INSTRUCTIONS 

  • Heat oven and prepare Pan: Preheat your oven to 350 degrees F (175 degrees C). Grease and line a cake pan with parchment paper.
  • Mix dry ingredients: in a bowl mixing, whisk together flour, baking powder, baking soda, cinnamon, nutmeg and salt, and ginger until thoroughly combined.
  • Mix the Wet Ingredients In a separate mixing bowl, beat the sugar, vegetable oil, egg, and vanilla extract until smooth.
  • Combine Dry and Wet ingredients: Gradually add the dry ingredients to the wet ingredients, blending until just combined. If desired, incorporate the grated carrots and chopped nuts.
  • Bake: Put the batter inside the cake pan and smooth the top using a spatula. Bake in the oven for 25 to 30 minutes until a toothpick in the center is clean.
  • The cake is cool. Remove it from the oven and allow it to sit in the pan to cool for about 10 minutes. After that, transfer the cake onto the rack on a wire to allow it to cool completely.
  • Frosting: Once the cake is cool, spread an even layer of cream cheese frosting on the cake’s top.
