📝 Ingredients:

2 cups cooked rice (preferably day-old)
1 lb chicken breast, diced
2 tablespoons vegetable oil (divided)
2 eggs, lightly beaten
1 cup frozen mixed vegetables (carrots, peas, corn)
3 green onions, chopped
3-4 tablespoons soy sauce
1 teaspoon sesame oil (optional)
Salt and pepper to taste

Prepare the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Scramble the Eggs:
In the same skillet, add a little more oil if needed. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the chicken.
