Pan-Seared Scallops with Citrus-Herb Butter 🐚🍋🧈
Ingredients:
1 lb sea scallops (about 12-16 large scallops)
2 tbsp olive oil
Salt and pepper, to taste
4 tbsp unsalted butter
3 garlic cloves, minced
1/4 cup freshly squeezed lemon juice (about 1-2 lemons)
2 tbsp fresh parsley, chopped
Lemon wedges, for serving
Instructions:
Prepare the scallops: Use paper towels to gently pat the scallops dry, removing any excess moisture. Season both sides liberally with salt and pepper.
Heat the pan: In a large skillet, heat the olive oil over medium-high heat until it reaches a high temperature and becomes shimmering.
Sear the scallops: Carefully place the scallops into the hot skillet, ensuring they are spaced apart. Cook without moving them for 2-3 minutes on one side until a golden crust develops. Flip the scallops and cook for an additional 1-2 minutes on the other side. The scallops should be opaque and slightly firm to the touch. Once cooked, remove them from the skillet and set aside.
Make the citrus-herb butter sauce: In the same skillet, reduce the heat to medium-low and add the butter. Once melted, introduce the minced garlic and sauté for about 1 minute until fragrant. Stir in the freshly squeezed lemon juice and chopped parsley, cooking for another 1-2 minutes until the sauce slightly thickens.
Serve: Drizzle the citrus-herb butter sauce over the pan-seared scallops. Garnish with additional parsley and lemon wedges for an extra burst of freshness.
