Ingredients:
Crust:
2 cups crushed graham wafers
1/4 cup granulated sugar
1/2 cup melted unsalted butter
Cream Cheese Layer:
8 oz softened cream cheese
1/4 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
Pumpkin Cheesecake Layer:
16 oz softened cream cheese
1 cup canned pumpkin puree
3/4 cup granulated sugar
2 large eggs
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
Topping:
1 cup caramel sauce
Whipped cream
Directions:
Crust:
Preheat oven to 325°F (165°C).
Mix crushed graham wafers, sugar, and melted butter. Press into a 9-inch springform pan.
Bake for 10 minutes. Cool.
Cream Cheese Layer:
Beat softened cream cheese and sugar until smooth. Add egg and vanilla extract.
Spread over the crust.
Pumpkin Cheesecake Layer:
Beat cream cheese, pumpkin puree, sugar, eggs, vanilla extract, and spices until smooth.
Pour over the cream cheese layer.
Bake:
Bake for 60-70 minutes until the center is set. Turn off oven, leave door ajar for 1 hour.
Refrigerate for 4 hours or overnight.
Topping:
Drizzle with caramel sauce and top with whipped cream before serving.
