4-6 boneless cut-down pork chops
3 large sweet potatoes, peeled and cubed into chips
1 large sweet onion, diced
16 ounces of unsalted stock
1/4 cup of juice blend
2 tablespoons apple cider vinegar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 1/2 teaspoons ground cumin
1 1/2 teaspoons sea salt
3/4 teaspoon ground black pepper
1 1/2 teaspoons demerara sugar
Steps to follow
Add the sweet potato ‘frites’ and onion to the slow cooker.Sprinkle the cumin, nutmeg, cinnamon, salt, and pepper over the top of the mixture.
Lay the pork chops flat and season with salt, black pepper, and demerara sugar. Add to the slow cooker with the potatoes. Pour in the unsalted stock and add the apple cider vinegar, finishing with a glaze made from the remaining spices. Cover the slow cooker and cook on low for 8 hours until the pork chops are cooked to your liking
