Delicious Black Forest Cheesecake

Requisites
For the Base:
1 ½ cups crushed cocoa-flavored biscuits
¼ cup melted butter
For the Cheesecake Filling:
3 (8 oz) packages soft and creamy cream cheese, softened
1 cup granulated sugar
1 teaspoon almond extract
3 large eggs
½ cup sour cream
¼ cup cocoa powder
For the Topping:
1 can rich cherry jam
Lightly sweetened whipped cream (for garnish)
Fine chocolate chips (for garnish)

Prescriptions
Prepare the Base:
Preheat your oven to a moderate heat of 165°C.
Mix the crushed cocoa-flavored biscuits with melted butter until they are well amalgamated.
Press the mixture firmly into the bottom of a loose-bottomed cake pan. Set aside.
Mix the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese, granulated sugar, and almond extract until the mixture is smooth and well combined.
Add the eggs one at a time, blending well after each addition.
Mix in the sour cream and cocoa powder until fully incorporated.
Bake the Cheesecake:
Pour the cheesecake filling over the prepared base.
Bake for approximately 55-60 minutes, or until the centre is set and the edges are slightly puffed.
Switch off the oven and let the cheesecake cool completely in the oven with the door ajar to prevent cracking.
Apply the Topping:
Once the cheesecake has cooled, spread the rich cherry jam evenly over the top.
Garnish and Serve:
Garnish with lightly sweetened whipped cream and fine chocolate chips.
Chill in the refrigerator for at least 4 hours (or overnight) to allow the flavors to combine and the cheesecake to firm up.
