Banana Caramel Peanut Butter Cheesecake 🥜

Ingredients:

Crust:

1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
2 tbsp granulated sugar
Cheesecake Filling:

24 oz cream cheese, softened
1 cup creamy peanut butter
1 cup granulated sugar
3 large eggs
1/2 cup mashed ripe bananas (about 1-2 bananas)
1/2 cup sour cream
1 tsp vanilla extract
Caramel Topping:

1/2 cup caramel sauce (store-bought or homemade)
1 banana, sliced (for garnish)
1/4 cup chopped peanuts (for garnish)
Instructions:

Crust: Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.

Cheesecake Filling: In a large bowl, beat the softened cream cheese, peanut butter, and sugar until smooth. Add eggs one at a time, mixing after each addition. Stir in mashed bananas, sour cream, and vanilla extract until well combined.

Pour the cheesecake batter over the cooled crust. Bake for 50-60 minutes, or until the center is set. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.

Caramel Topping: Before serving, drizzle the caramel sauce over the chilled cheesecake. Garnish with banana slices and chopped peanuts.

Notes:

Add chocolate chips to the cheesecake batter for a delicious twist.
Serve with whipped cream for extra indulgence!
