Garlic Butter Lobster Bites with Saffron Mash 🦞🧄🍽️
Ingredients:
For the Lobster Bites:
1 lb lobster meat (cut into bite-sized pieces)
3 tbsp unsalted butter
3 garlic cloves (minced)
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
For the Saffron Mash:
2 lbs potatoes (peeled and diced)
1/2 cup heavy cream
4 tbsp butter
Pinch of saffron threads (soaked in 2 tbsp warm water)
Salt and pepper to taste
Instructions:
Boil potatoes in salted water until tender (about 15 minutes). Drain, then mash with butter, cream, saffron mixture, salt, and pepper. Set aside.
Heat olive oil in a skillet over medium heat. Add lobster bites and cook for 2-3 minutes until golden.
Reduce heat, add butter and garlic to the skillet, and cook for another 1-2 minutes, coating lobster in the garlic butter.
Serve lobster bites over saffron mash, garnished with parsley.
Notes:
A touch of lemon zest enhances the flavor!
