INGREDIENTS  

  • Zucchini Two cups (about 250g) and grated
  • All-purpose flour: 2 cups (250 grams)
  • Baking powder 1 teaspoon
  • Baking soda 1/2 teaspoon
  • Salt 1 teaspoon
  • Ground cinnamon 1 teaspoon
  • Eggs: 2 large eggs
  • Granulated sugar 1 Cup (200 grams)
  • Vegetable oil or butter that has been melted 1 Cup (120 milliliters)
  • Vanilla extract: 1 teaspoon
  • Additional add-ins (such as chopped raisins, chopped nuts or even chocolate chips) Modify according to the preference of the user.

INSTRUCTIONS 

  • Prepare to the oven to 350 degrees. PreheatPreheat your oven to 350 degrees F (175degC). Grease or line the bread pan using parchment then put the pan aside.
  • Prepare the Zucchini• Clean thoroughly and drain the zucchini. Next, cut it with a grater or food processor. Once the zucchini is shredded, place it on a clean paper towel and squeeze it out of the excess water.
  •  Mix dry ingredients. In a mixing bowl, combine all-purpose flour and baking powder with 
  • baking soda and salt. Add ground cinnamon, salt, and the all-purpose flour., and ground nutmeg until well mixed.
  • Mix Wet Ingredients In a separate mixing bowl, mix with the egg, sugar-granulated vegetable oil, melting butter, and vanilla extract until it’s smooth.
  • Combine Dry and Wet Ingredients Add dry ingredients gradually to moist ones, mixing them until well combined. Do not overmix to avoid creating a thick loaf.
  • *Fold in zucchini and optional Add-ons**: Gently incorporate the zucchini shredded inside the mixture until it is evenly dispersed. If you are using optional ingredients such as chopped nuts or chocolate chips, mix them into the batter at this point.
  • Bake• Place the dough in the loaf pan and spread the batter equally. Bake in the preheated oven for 50-60 minutes. A toothpick which is placed in the loaf’s middle.Emerges clear.
  • Cool and Serve* Serve the bread with zucchini to rest in pans for 10 to 15 minutes before moving it onto an air-tight rack for cooling completely. After cooling, slice the bread and serve.
