🍗 Savory Shredded Chicken with Creamy Gravy Over Mashed Potatoes 🥔 (recipe below)
Ingredients:
For the Shredded Chicken and Gravy:
4 chicken breasts or thighs, boneless and skinless
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1/2 cup sour cream
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp dried thyme
1 tsp dried parsley
Salt and black pepper, to taste
2 tbsp unsalted butter
For the Mashed Potatoes:
4 large russet potatoes, peeled and quartered
1/2 cup milk
4 tbsp unsalted butter
Salt and black pepper, to taste
1/4 cup sour cream (optional for added creaminess)
Instructions:
Cook the Chicken:
In a large skillet or Dutch oven, melt the butter over medium heat. Sauté the onion and garlic until softened, about 3-4 minutes. Add the chicken, pour in the chicken broth, and season with thyme, parsley, salt, and pepper. Cover and simmer for 20-25 minutes until the chicken is fully cooked.
Shred the Chicken:
Remove the chicken and shred it using two forks. Set aside.
Make the Gravy:
In the same skillet, stir in the cream of chicken soup and sour cream until smooth. Return the shredded chicken to the skillet, stirring to coat the chicken in the gravy. Let it simmer for 5 minutes to blend the flavors.
Boil the Potatoes:
While the chicken cooks, bring a pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Mash the Potatoes:
Add butter, milk, and optional sour cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper.
