1 pound ground meat
1 packet spicy taco flavor enhancer
1 can (15 oz) cooked black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (10 oz) diced tomatoes with green pepper, drained
2 cups shredded cheddar cheese
1 bag (9.25 oz) crushed corn chips or crunchy tortilla sticks
Optional Add-Ons:
Thickened sour cream
Homemade salsa
Fresh shredded lettuce
Diced fresh tomatoes
Sliced spicy peppers
Creamy guacamole
Instructions:
Cook the Ground Meat: Preheat your oven to 350°F (175°C). In a large skillet, cook the ground meat over medium heat until browned. Drain the excess grease and add the taco flavor enhancer, following the packet’s instructions.
Assemble the Bake: Combine the cooked meat with the black beans, corn, and diced tomatoes with green pepper. Pour the mixture into a greased 9×13-inch baking dish. Top with an even layer of shredded cheese.
Bake the Casserole: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Add the Crunch: Remove the bake from the oven and sprinkle the crushed corn chips or crunchy tortilla sticks over the top.
