Chocolate Peanut Butter Cup Galaxy Cake 🌌🍫🥜
Ingredients:
Chocolate Cake:
1 ¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups granulated sugar
2 large eggs
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Peanut Butter Filling:
1 cup peanut butter
½ cup powdered sugar
1 teaspoon vanilla extract
Chocolate Ganache:
1 ½ cups chocolate chips
¾ cup heavy cream
Decorations:
Mini peanut butter cups (for topping)
Edible glitter or galaxy-themed sprinkles
Instructions:
1️⃣ Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
2️⃣ In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
3️⃣ In another bowl, beat sugar, eggs, milk, oil, and vanilla. Gradually mix in dry ingredients. Stir in boiling water until smooth.
4️⃣ Divide the batter between pans and bake for 30-35 minutes. Let cakes cool completely.
5️⃣ For the filling, mix peanut butter, powdered sugar, and vanilla until creamy. Spread between the cooled cake layers.
6️⃣ Heat cream and pour over chocolate chips, stirring to create a smooth ganache. Pour over the cake, letting it drip down the sides.
7️⃣ Decorate with mini peanut butter cups and sprinkle edible glitter or galaxy sprinkles.
Notes:
Swap peanut butter cups for other favorite candies for variety.
Try a swirl of purple, blue, and black icing for an extra galaxy effect!
